Amish Buttermilk Biscuits
Title: Amish Buttermilk Biscuits Categories: Breads Yield: 1 Servings 3 c Flour 1/4 c Instant lowfat dry milk (I Used nonfat) 1 tb Baking powder 2 tb Sugar (I used less) 1 ts Salt 2 ts Cream of tartar 1/2 c Cold butter in pieces 1/2 c Cold lard 14 tb Cold buttermilk Pulse the dry ingredients with the butter and lard until grainy, NOT blended! Add the cold buttermilk, and mix until the dough comes together. Place dough on a floured cloth or marble slab, and knead a few times with floured hands. (Keep the dough cold!) Pat or roll out to 3/4-inch thick, and cut out biscuit rounds or shapes. (You can use a cookie cutter!) These biscuits can be frozen ahead, or baked immediately.
