Title: Apricot Chicken Roll-Ups Categories: Poultry Yield: 4 Servings 3 tb Seasoned dried bread crumbs 4 3-oz skinless boneless -chicken breasts; pounded -thin 2 ts Canola oil 1/4 c Apricot spreadable fruit; -melted submitted by: johanssen@matnet.com Preheat broiler. Spray broiler pan with nonstick cooking spray. Place bread crumbs on large sheet of wax paper. Brush 1 side of each chicken breast with 1/2 teaspoon of the oil; place oiled-side down on bread crumbs, pressing firmly to coat. Brush uncoated side of each chicken breast with one-fourth of the spreadable fruit. Rol breass to enclose fruit; secure with wooden toothpicks. Place chicken rolls in prepared broiler pan; broil 4" from heat, 6-8 minutes, until cooked through.
