Title: Asparagus Salad Categories: Asparagus, Vegetables Yield: 6 Servings 3 c Asparagus; drained 1 1/2 c Tomato juice 1/3 c Vinegar 1 1/2 ts Salt 1/2 ts Pepper 1 ts Sugar; sugar substitute to -equal 1/4 ts Paprika 1 md Chopped onion 2 ts Chopped onion 2 ts Chopped parsley 1 ts Dill Lettuce leaves Place the asparagus in a shallow dish and set aside. Combine the remaining ingredients (except the lettuce) in a blender and mix well. Pour the mixture over the asparagus and marinate for 1 hour; drain. Place the asparagus on the lettuce leaves.
