Title: Bayou Chicken Bake Categories: Casseroles, Poultry, Vegetables Yield: 4 Servings 4 To 6 Perdue Individually -Frozen boneless, skinless -chicken breasts 1 1/2 To 2 tsp. Cajun or Creole -seasoning 1/2 c Chopped onion 1 c Uncooked regular long-grain -rice 1 pk (16 oz.) frozen black-eyed -peas 2 cn (14 1/2 oz. each)Cajun-style -stewed tomatoes 2 tb Chopped fresh parsley Preheat oven to 350øF. Lightly grease 13x9 inch baking dish. Sprinkle chicken with Cajun seasoning; place in baking dish. In large bowl, combine onion, rice, black-eyed peas and tomatoes. Pour over chicken. Cover and bake 45 minutes. Uncover and bake 15 minutes longer, or until chicken is cooked through. Sprinkle with parsley before serving. Makes 4 to 6 servings.
