Title: Beef, Hominy and Bean Soup Categories: Favorites, Ground beef, Hominy, Lisa Yield: 6 Servings 1/2 lb Ground round; crumbled 2 Cloves garlic 1 md Onion; finely chopped 2 tb Fresh parsley; finely -chopped 1 tb Cilantro; finely chopped 1/2 ts Dried whole thyme 4 c Beef broth 16 oz Canned pinto beans; rinsed -and drained 16 oz Canned hominy; rinsed and -drained Salt and pepper; to taste --------------------------------FOR GARNISH-------------------------------- Onions; sliced thin Jalapenos; sliced thin Fresh cilantro; finely -chopped Brown ground round in lightly greased skillet. Add garlic and onion and cook until onion is lightly browned. Add parsley, cilantro, and thyme and mix. Transfer beef mixture to a soup pot. Add beef broth, pinto beans, hominy and salt and pepper. Bring mixture to a boil; reduce heat and simmer for 30 minutes. Serve with garnishes.
