Title: Black Bean Salad

Yield: 1 Servings

3 tb Fresh lime juice
2 tb Olive oil
1 cn (15-oz) black beans, rinsed
-and drained
1 Mango, peeled and chopped
1 Ripe avocado, peeled and
-chopped
1/2 Red onion diced
Tabasco, to taste
2 tb Minced fresh parsley
1 c Shredded romaine lettuce

In a bowl, whisk together lime juice, oil, and salt to taste. Stir in
remaining ingredients, except lettuce, and season with salt and pepper to
taste. Let salad stand, stirring once or twice, 15 minutes for flavors to
develop. Serve salad on top of lettuce.

Yield: 2 servings
