Title: Blt in Bibb Lettuce Cups Categories: Cooking liv, Import Yield: 1 Servings 4 Tomatoes; seeded and chopped -fine (about 2 cups) 1/2 c Finely diced smoked -mozzarella 1/4 c Finely shredded arugula -leaves 6 sl Bacon; cooked until crisp -and crumbled 1/4 c Finely chopped sweet onion 2 tb Olive oil 2 ts Balsamic vinegar 24 Outer bibb lettuce leaves -(about 4 heads), washed and -patted dry In a bowl, toss together tomatoes, mozzarella, arugula, bacon, onion, olive oil, vinegar, and salt and pepper to taste.
