Title: Blue Cheese Tenderloin Steaks Categories: Meats, Beef Yield: 4 Servings BARB DAY - GWHP32A----- 4 Tenderloin steaks -- 1" Thick 2 ts Onion -- minced 2 tb Cream cheese -- softened 1 ds White pepper 4 ts Blue cheese -- crumbled 1 lg Garlic clove -- halved 4 ts Plain yogurt -- low-fat if 1/2 ts Salt -- divided Desired 2 ts Parsley -- chopped Preparation time: 22 minutes Combine cream cheese, blue cheese, yogurt, onion and pepper; reserve. Rub each side of the steaks with garlic. Place the steaks on a rack in the broiler pan so the surface of the meat is 2 to 3 inches from th heat. Broil t to 6 minutes. Season with 1/4 teaspoon salt. Turn and broil 3 to 4 minutes. Season with remaining salt. to- each steak with an equal amount of reserved cheese mixture. Broil an additional 1 to 2 minutes. Garnish with parsley.
