Title: Blue Corn Posole Categories: Pork, Vegetable, Southwest Yield: 1 Servings 2 lb Posole; blue or yellow 2 lb Beef; or pork, cubed 3 Cloves garlic; minced 8 Red chile pods 1/2 ts Oregano 1 ts Salt Soak posole overnight, then rinse well. Boil posole in salted water for about 2 hours. Add meat, chile pods (or chile powder), oregano and garlic. Cover and continue to simmer for another hour or until posole is tender.
