Title: Blueberry Gingerbread Categories: None Yield: 12 Servings 2 1/2 c Unbleached flour 1 c Blueberries* -- frozen 1 ts Baking powder 1 ts Baking soda 1/4 ts Salt 1 ts Cinnamon 2 ts Ginger 1/2 c Brown sugar -- packed 1 tb Brown sugar -- packed 1/3 c Applesauce -- at room Temperature 1 Egg white -- whipped 1/2 c Fat-free plain yogurt 1/4 c Molasses 2 tb Molasses 1 c Water -- very hot Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing bowl, combine flour, blueberries, baking powder, baking soda, salt, cinnamon, ginger, and brown sugar. In another mixing bowl, combine applesauce, egg white, yogurt, molasses and water. Mix dry ingredients with wet ingredients just until moistened. Pour batter into the prepared pan(s).
