Bride's Pudding
Title: Bride's Pudding Categories: Dessert Yield: 8 Servings 2 Envelopes unflavored gelatin 1/2 c Water 6 Eggs 1 pn Salt 3/4 c Sugar 1 ts Vanilla 1 pt Whipped cream 1 cn Flaked coconut 2 pk Frozen raspberries; thawed From: bobbi744@sojourn.com (Roberta Banghart) Date: Wed, 03 Jul 1996 15:10:09 -0400 Recipe By: Recipe from The Nantucket Diet Murders by Virginia Rich Soften gelatin in water. Whip egg whites to a froth with a pinch of salt, then until peaks form. Slowly mix in gelatin, and vanilla being sure that it is well mixed. Whip cream and fold into gelatin mixture. Butter a springform pan. Press most of the coconut onto sides and bottom of pan. Pour in whipped cream mixture. Top with rest of coconut. Chill for 4-5 hours until completely set.
