Title: Buttermilk Sherbet Categories: Desserts, Meringue po Yield: 1 Servings 1 c Sugar 1/2 Envelope unflavored gelatin 1/4 c Boiling water 1/8 ts Salt 1 Egg white 2 c Buttermilk 1 cn (Small) crushed pineapple 1 tb Lemon juice 1 ts Vanilla Mix sugar, salt and gelatin; stir in boiling water, beating briskly. (If gelatin is not dissolved, place on low heat and stir.) Cool and add buttermilk, pineapple, lemon juice and vanilla. Pour into refrigerator tray and freeze until firm. Turn into bowl and let stand while beating egg white until stiff. Beat frozen mixture until smooth; fold in egg white. Return to freezer tray. Freeze firm.
