Title: Caribou Pie Categories: Meats Yield: 1 Servings 2 lb Caribou or moose steak 3 tb Lemon juice 1/4 c Flour 1 ts Chili powder 1/4 c Lard 1/2 ts Mace 4 Bay leaves 1/2 ts Fresh lovage or celery Seeds 1 c Red wine Rich pastry crust Cut meat into 1" cubes & roll in lemon juice. Mix flour & chili powder; dredge cubes in mixture. Heat lard in large skillet & brown meat a few at a time. When all are seared; return to pan; add spices & red wine. Cover with cold water & bring to boil. Lower heat & simmer, covered, for 1/2 hour. Transfer meat to pie dish & top with crust. Bake at 400 oven for 20-25 minutes.
