Title: Carribean Casserole Categories: Beans, Casseroles Yield: 6 Servings 1 md Onion; chopped 1 tb Oil 1 15-oz can stewed tomatoes 1 16-oz can black beans 1 ts Oregano leaves 1 ts Turmeric 1/2 ts Garlic powder 1 1/2 c Instant brown rice Stir onion in hot oil until tender (do not brown). Add tomatoes, beans (include liquid from both), oregano, turmeric, and garlic powder. Bring to a boil. Stir in rice and cover. Reduce heat to simmer for 5 minutes.
