Title: Carrot Cake Categories: Prod. svc, Oct., Fatfree Yield: 10 Servings 1 ts Ground cinnamon 1 ts Ground allspice 1/2 ts Freshly grated nutmeg 1/4 ts Ground cloves 1 1/2 c Whole wheat pastry flour 1/3 c Wheat bran 1 1/2 ts Baking powder 1 ts Baking soda 1 c Grated carrots 1 c Raisins or other dried Fruit 3/4 c Honey 1 1/2 c Water Preheat the oven to 350 degrees F. Combine all the dry ingredients and mix well. In a separate bowl combine the liquid ingredients. Fold the dry ingredients into the wet ones and mix well. Do not overbeat or mix. Pour into a non-stick 9x5x3 inch loaf pan. Bake for 1 hour and 15 minutes, or until a toothpick comes out clean. This recipe appeared in Dr. Dean Ornish's Program for Reversing Heart Disease.
