Title: Carrot Jam Categories: Jams &, Jellies Yield: 1 Servings 1 qt Carrots, raw; grated 2/3 c Juice; orange 1/3 c Orange peel; grated 3 c Sugar 1/2 ts Cloves or nutmeg; ground 1/2 ts Allspice 1/2 ts Cinnamon Combine all ingredients in a large sauce pot. Bring slowly to a boil. Reduce heat; and simmer, stirriing constantly until thick. Pour hot into hot jars, leaving 1/4" headspace. Adjust caps. Process 10 minutes in a boiling water bath.
