Title: Carrot Muffins Categories: From my gar, Vegetables Yield: 1 Servings 4 Carrots; grated 1 1/2 c Milk 1/4 c Orange juice 2 Eggs; beaten 2 c Flour 2 c Cornmeal 3 ts Baking powder 3 tb Sugar 1 ts Salt 4 tb Butter; melted Preheat oven to 325 degrees. In large bowl combine carrots, milk, orange juice and eggs. In separate bowl sift together the flour, cornmeal, baking powder, sugar and salt. Slowly stir the flour mixture into the carrot mixture. Add melted butter.
