Title: Casbah Couscous Pudding Categories: Desserts, Family, Low-fat, Middle east Yield: 8 Servings 4 Egg Yolks 2 ts Vanilla Extract 3 tb Sugar; Or Honey 1 Orange Rind; Grated 1/2 ts Salt 1 qt Milk 1/3 c Couscous Cinnamon; For Garnish Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl. In a medium saucepan combine milk and couscous and heat just to boiling. Remove from burner. Add egg mixture and return to burner. Heat to a boil while stirring until thick and creamy.
