Title: Cheesy Chile Toast Categories: Appetizers, Posted Yield: 8 Servings 7 oz Green Chiles; Diced 8 oz Monterey Jack Cheese; -Shredded 3/4 c Red Bell Pepper; Minced 1/2 c Mayonnaise 4 English Muffins; Halved Preheat the broiler. Drain the chilies and combine them in a medium bowl with the cheese, bell pepper and mayonaise. Stir until well blended. Arrange the muffins in a single layer on a baking sheet. Broil 3 to 4" from the heat about 2 minutes, until brown. Remove and spread cheese mixture over the bread. Return to broiler and broil about 4 minutes longer, until the cheese melts. Watch carefully.
