Title: Cheesy Lemon Spread (Eb) Categories: Abm, Posted, Spreads Yield: 1 Servings 2 Eggs; slightly beaten 1/4 c Lemon juice 3 tb Butter or margarine 3/4 c Sugar 1 ts Lemon peel; fresh grated 1 ds Salt 1 3 oz pkg. cream cheese In a heavy pan mix eggs, juice, butter, sugar, and salt. Bring to a boil while stirring over low heat, then cook 3 more minutes. Beat cream cheese and lemon peel. When egg mixture is cool, blend into cheese until smooth. Store in refrigerator.
