Cheesy Potato Soup
Title: Cheesy Potato Soup Categories: None Yield: 1 Servings 8 Potatoes, peeled and cubed 2 sm Onions, chopped 4 sl Bacon, fried crisp (reserve -2 Tbsp. grease) 1/4 c Butter 1/2 lb Velveeta 4 oz Sour cream 2 c Milk 1 cn Cream of celery soup 2 c Potato water Boil potatoes until tender. Set aside, reserving 2 cups of the water. Saute onion in butter until tender. In large saucepan, add milk, potato water, bacon grease, onion and butter, crumbled bacon, soup, sour cream and Velveeta. Simmer all together until cheese is melted. Add potatoes. Simmer until heated through. Add salt and pepper to taste.
