Title: Cheesy Potatoes Categories: None Yield: 1 Servings 2 1/2 lb Boiling potatoes; peeled and -cut into 1 inch cubes 1/2 lb Cream cheese 1/2 lb Sour cream 2 Eggs 3/4 c Grated Parmesan cheese 1/8 ts Hot red pepper sauce 2 c Shredded cheddar cheese Prep: 10 min, Cook: 45 min. Place potatoes in a steamer basket over boiling water. Cover pan and steam 12-15 minutes or until tender. Drain. Preheat oven to 350øF. Combine next 5 ingredients and salt and pepper to taste in a food processor. Process until smooth. Add cooked potatoes and process until just combined. Add half the cheese and mix thoroughly.
