Cherry Nut Cake - My Favorite!
Title: Cherry Nut Cake - My Favorite! Categories: Cakes, Desserts Yield: 1 Servings 2 1/4 c Flour 1 1/3 c Sugar 3 ts Baking powder 1 ts Salt 1/2 c Vegetable shortening 1/4 c Maraschino cherry juice 16 Maraschino cherries 1/2 c Milk 4 lg Egg whites 1/2 c Chopped walnuts Preheat oven to 350°F. Sift together the flour, sugar, baking powder, and salt. Add the vegetable shortening, cherry juice, cherries and the milk and beat for 2 minutes. Add 1/2-2/3 cups(4 large) unbeaten egg whites and beat 2 minutes more. Then fold in1/2 c. of chopped nuts. Pour into two greased and floured round cake layer pans and bake for 30-35 minutes. Frost with pink Seven Minute Frosting (it's recipe is in this file). NOTES : MUST use 7-Minute Frosting on this cake and color it pink.
