Chicken a L'orange


Title: Chicken a L'orange

Yield: 6 Servings

6 Chicken breast halves;
-skinned and boned
Salt; as desired
1/4 c Orange juice
1 tb Honey
1 pk (6.25-oz) Uncle Ben's fast
-cooking long grain & wild
-rice
2 tb Butter or margarine
6 sl (small) orange
2 Green onions; sliced

Pound chicken to 1/4-inch thickness; season with salt. Combine orange juice
and honey; set aside. Cook contents of rice and seasoning packets according
to package directions. Meanwhile, melt butter in large skillet over medium
heat. Add chicken and cook until lightly browned on one side, about 4
minutes. Turn; spoon reserved orange juice mixture over chicken. Top with
orange slices. Continue to cook 4-5 minutes, or until chicken is cooked
through. Stir green onions into cooked rice. Serve chicken and sauce with
rice.
