Title: Chicken a la King #4 Categories: Poultry Yield: 4 Servings 1/4 c Onion; chopped 1/2 sm Green bell pepper; -finely chopped 1 c Sliced mushrooms 4 tb Margarine 1/4 c Plain flour 1/4 ts Salt; (optional) 1/4 ts Ground white pepper 1 1/2 c Skim milk 1 c Low sodium chicken broth 1 1/2 c Cooked chicken; chopped 1 Pimento; diced From: amwilson@juno.com (A Wilson) Date: Thu, 1 Aug 1996 03:55:21 PST In medium size saucepan over medium heat, saute' onion, bell pepper and mushrooms in margarine. Stir in flour, salt and pepper. Reduce heat to low; cook, stirring mixture constantly with a wooden spoon until bubbly. Remove from heat. Using a whisk, stir in milk and broth. Heat to boiling, stirring constantly. Stir in chicken and pimento; heat through. Serve over whole wheat toast. Approximately 145 calories per serving.
