Title: Chicken Croquettes Categories: Poultry, Snacks Yield: 12 Pieces 1 lb Boiled chicken 1/2 pt Milk 1/4 lb Butter 2 tb Flour Pepper Salt 1 Egg Breadcrumbs Lard/Dripping for frying Blend the flour with a little milk, and put the rest of the milk to heat. When scalded pour in the blended flour with the butter, salt and pepper. When like thick cream mix in the finely minced chicken, and put on one side to become cold and stiff. Then make into 12 croquettes, roll in beaten egg, then in fine bread crumbs. Return to fridge for at least 1 hour. Fry in hot lard or dripping.
