Chicken Salad Makeover
Title: Chicken Salad Makeover Categories: Grapes, Meat Yield: 4 Servings 2 c Cooked chicken breasts; -diced 1 1/2 c Seedless grapes 1 md Apple; cored and sliced 1/2 c Raisins 1/2 c Diced celery 1/2 ts Dried tarragon; crushed Salt and pepper; to taste 2 tb Lowfat mayonnaise; *see note 2 tb Yogurt; *see note 1/4 c Chopped parsley Lettuce leaves Thyme sprigs; optional Combine all ingredients except lettuce and thyme mix well. Sense chicken salad on lettuce leaves. Garnish with thyrne, if desired. Makes 4 to 6 servings Nutritional Analysis Per Serving: 180 Cal., 15 g pro., 6 g fat (28% Cal. from fat), 19 g carb., 45 mg chol., 2 g fiber and 57 mg sodium.
