Chicken Stew
Title: Chicken Stew Categories: None Yield: 1 Servings 2 lb Chicken pieces 2 tb Oil 1 Red onion; chopped 2 Garlic cloves; crushed 1 Green pepper; chopped 2 Tomatoes; peeled, seded and -chopped 1 Hot (chili) pepper; whole 2 tb Chopped coriander 3 c Beer Salt; pepper and cumin to -taste This is a typical dish from Ecuador, my country. One of my favorite recipes. Hope you like it. In a large saucepan, heat the oil and saute the onion, garlic, tomatoes, green pepper and coriander. Season with salt, pepper and cumin. Add chicken and cook, stirring for a few minutes. Add beer and whole hot pepper. Cover and cook at medium heat until tender (about 30 minutes). Serve with yellow rice and fried ripe plantain.
