Title: Chicken Topping for Cooked Rice Categories: Poultry Yield: 4 Servings 3/4 c Cooked chicken 2 Or 3 Tomatoes 1/2 ts Salt 1 ds Pepper 1. Shred cooked chicken. 2. Peel tomatoes; place in a saucepan. Sprinkle with salt and pepper and let simmer until reduced to a pulp (about 5 minutes). 3. Transfer cooked rice to a serving dish.
