Chicken with Hard Cider
Title: Chicken with Hard Cider Categories: Poultry Yield: 4 Servings 4 c Butter; divided 1 lb Apple, tart; peeled, cored, 1 c Cashews; coarsely chopped 1 ts Sugar 3 c Hard cider 1 Chicken; cut up Saut# chicken lightly in 1/2 cup of the butter. Place apples in a buttered shallow baking dish; top with chicken and sprinkle with nuts and sugar. Add cider; dot with remaining butter. Cover. Bake in preheated moderate oven (375 F.) until tender, about 45 minutes.
