Title: Chocolate Peanut Butter Pudding Categories: None Yield: 1 Servings 1 c Sugar 3 tb Cornstarch 3 tb Cocoa powder, heaping 3 tb All purpose flour 3 c Lowfat milk 3 Egg yolks 1/2 c Chunky peanut butter 2 ts Unsalted butter 1 ts Vanilla extract Combine first 4 ingredients in a heavy non-reactive saucepan. Stir in milk and egg yolks. Bring to a boil over medium high heat, stirring constantly. Immediately remove from heat. Stir in peanut butter, butter and vanilla until butter is melted. Mix thoroughly. Transfer to a serving bowl. Press plastic wrap over pudding surface to prevent skin from forming. Serve warm or cold. This recipe serves 8.
