Title: Chuletas

4 lb Beef, ground
1 c Cheese, parmesan; grated
4 c Parsley; minced
1 ts Tabasco sauce
6 Onions, yellow; chopped
2 ts Pepper, black
4 Eggs
6 c Bread crumbs, dry
2 ts Salt

Mix all ingredients except crumbs. Form into 30 small balls. Coat balls
with bread crumbs. Chill well. Saute in olive oil three to four minutes.
Serve with refried beans and salsa. Source: James Beard's American Cookery.
