Title: Cider Vinegar Marinated Pork Chops Categories: Meats Yield: 4 Servings 1 c Water 1 c Cider vinegar 1 md Onion, thinly sliced 4 lg Garlic cloves, sliced 1 tb Pickling spice 1/2 ts Ground cumin 4 8 oz. pork loin chops ( 1 -inch thick) All purpose flour Salt and freshly ground -pepper Vegetable oil Mix the first 6 ingredients in shallow glass baking dish just large enough to accommodate pork in single layer. Add pork, turning to coat. Cover with plastic wrap and refrigerate 4 hours. Remove pork from marinade; pat dry. Season flour with salt and pepper. Dredge pork in flour, shaking off excess. Heat oil in heavy skillet over medium heat. Add pork and cook about 8 minutes per side for medium. Season with salt and pepper and serve. Yield: 4 servings.
