Title: Cilantro Rice Categories: Rice, Salad Yield: 8 Servings 1/3 c Vegetable oil 1/4 c Fresh lime juice 1/2 ts Salt 1/4 ts Pepper 3 c Cooked long-grain white -rice; room temp 3/4 c Each green/red bell -peppers; chopped 1/3 c Green onions; thinly sliced 1/4 c Fresh cilantro; minced 1. Whisk the oil, lime juice, salt and pepper in a bowl until well blended. 2. Add remaining ingredients. Toss to coat with dressing. Makes 5 cups or 8 servings.
