Title: Cinnamon Chicken From the Microwave Categories: Poultry Yield: 1 Servings 6 Chicken thighs; skinned All purpose flour 2 Egg whites or 1 large egg; -lightly beaten 1 ts Cinnamon 1 ds Pepper Plain bread crumbs 1 tb Melted butter Dip the chicken in flour, in egg (whites) mixed with cinnamon and pepper, and then in bread crumbs. Arrange in round dish or fluted tube dish with meatier portions toward edge of dish. Drizzle with melted butter and microwave on High for 10 minutes, covered with waxed paper; uncover the dish and cook for 5 minutes more. Makes a delicious, juicy lo-cal chicken dish. For herb-chicken, substitute herbs such as oregano, basil and thyme for the cinnamon; for Parmesan cheese, substitute paprika for the cinnamon and add 1/4 cup Parmesan cheese to the seasoned bread crumbs.
