Cinnamon-Orange Chicken
Title: Cinnamon-Orange Chicken Categories: Poultry Yield: 4 Servings 4 Chicken filets 1 ts Cinnamon 1/4 ts Nutmeg 2 ts Olive oil 1/2 c Onion; sliced 1 ts Ginger 1/2 c Orange juice 1 tb Dried currants 1 tb Capers; rinsed and drained Date: Fri, 08 Mar 1996 05:01:08 EST From: MarySpero@prodigy.com (MS MARY E SPERO) Recipe By: Weight Watchers Rinse and dry chicken. Sprinkle with cinnamon and nutmeg. Heat oil in medium skillet over medium-high heat. Add chicken and cook for 3 minutes, or until lightly browned; turn chicken; add onion and ginger. Cook for 2-3 minutes, stirring frequently, until chicken is brown. Reduce heat; add orange juice, currants and capers. Cover and simmer for 7-10 minutes until chicken is thoroughly cooked. To serve, slice each chicken breast crosswise and spoon remaining sauce evenly over top. Makes 4 servings.
