Coconut Streusel Apple Cake
Title: Coconut Streusel Apple Cake Categories: None Yield: 12 -16 -----------------------------------PASTRY----------------------------------- 2 c Flour 1 c Butter or Margarin 1 tb Sugar 5 tb Cold water; (up to 6) --------------------------------SECOND STEP-------------------------------- 6 Apples Grand smith; Peeled, -cored, and sliced. 3 Tabls Ground biscuits; (like -Mary biscuits) 1/2 c Sugar 2 Tabls Flour 1/8 ts Salt 1 ts Cinnamon 1 Tabl Butter Cold; cut to -small pieces. 1 Tabl Lemon juice ---------------------------------STRESUSEL--------------------------------- --------------------------------MIX TOGETHER-------------------------------- 4 Tabls Butter. Melted 1/4 c Sugar 1/2 c Flour 1 c Flaked coconut I have got a very old cook book by the name "Apple Kitchen Cook Book ".The edition from 1966,Its pages are falling a part and I have taped it over and over again.There is one recipe that I can say it became like our family recipe. We all love apple cakes or pies, So try it , and you will not be sorry. Source: From my mother with love& more, Apple kitchen cook book. Pastry: In food processor mix the first 3 ingredients till resemble crumbs, Slowly add the water till it become a ball, DO NOT over mix. Line 26 cm spring form pan with the pastry. Prick pastry with a fork , Put in the refrigerator for 15 - 30 minutes. Second step: In a small bowl mix Sugar, flour, salt and cinnamon. Sprinkle the ground biscuits on the pastry, put half of the apples as first layer , Sprinkle half of the dry mix on top, Continue the same with the second part. Dot the butter on top and sprinkle the Lemon Juice all over. Bake in a pre heated 375 F hot oven for 45 minutes. The Stresusel: Whill baking the cake you prepare the Streusel. Mix together: Combine sugar, flour, coconut, Pour over the melted butter, Mix till all is well blended. Sprinkle this mixer over the top of nearly baked cake , Return to oven and continue to bake for another 15 - 20 minutes till topping is browned.
