Codfish Fluff
Title: Codfish Fluff Categories: Fish, Main dish Yield: 6 Servings 1 Box (2 oz) shredded salt cod 2 Eggs, well beaten 1 tb Dried parsley flakes 1 pk (5 1/2 oz) onion-flavor -instant mashed potato, -prepared Crisp bacon, crumbled, or -canned, or canned-onion -rings Soak cod in 2 cups cold water about 3 minutes. Drain well, squeezing out excess liquid with back of spoon. Add fish, eggs and parsley to prepared potato. Pour into greased preheated shallow 1 1/2 quart casserole. Top with bacon. Bake in preheated moderate oven (350F) about 35 minutes. Place piece of foil over top if bacon or onion rings brown too quickly.
