Title: Confetti Corn Categories: None Yield: 4 Servings 1 tb Olive oil 3 c Frozen corn kernels 1/2 c Diced red bell pepper 3/4 ts Chili powder 3 Scallions; thinly sliced 1/4 ts Salt Heat oil in a large skillet over medium heat. Add corn, bell pepper and chili powder. Increase heat to medium-high and cook, stirring often, until corn is hot, about 2 minutes. Stir in scallions and salt; cook 1 minute.
