Confetti Rice ( Also Cor Ii)
Title: Confetti Rice ( Also Cor Ii) Categories: Side, Dishes Yield: 8 Servings 1/2 lb Sliced bacon, diced 1 c Long grain rice, cooked 1 c Diced carrots, parboiled 1 c Diced celery, parboiled 1/2 c Fresh or frozen peas Soy sauce, optional In a large skillet, cook bacon until crisp. Remove to paper towels; drain all but 3 Tbsp of the drippings. Add rice, carrots, celery and peas; cook until heated through, about 5-7 minutes. Stir in bacon. Serve with soy sauce if desired.
