Title: Corn Casserole Categories: Microwave, Vegetables Yield: 6 Servings 1 1/2 lb Lean ground beef 1 1/2 ts Salt 1/2 ts Pepper 1/4 c Green pepper; chopped 1 c Onion; finely chopped 1 Clove garlic; minced or -pressed 1 c Chili sauce 1/4 c Water 1 tb Chili powder 1 pk Frozen corn; thawed 10 oz. Place meat, salt and pepper in a 3 quart casserole. Microwave at high (100%) until meat is no longer pink, 6 to 8 minutes, stirring twice to break meat up. Add green pepper, onion and garlic. Microwave at high (100%) until onions are transparent, 3 to 4 minutes, stirring once during cooking time. Stir in chili sauce, water, chili powder and corn. Microwave at high (100%) until hot and bubbly, 4 to 5 minutes, stirring once during cooking time. Serve with rice. Makes 6 servings.
