Title: Corn Fritters #3 Categories: Vegetable Yield: 4 Servings 2 Eggs; separated 1/2 c Milk 1 c Pancake mix 2 c Fresh corn -or- 1 cn (17-oz) whole kernel corn; -drained Blend egg yolks & milk. Add pancake mix & stir until smooth. Fold in corn. Beat egg whites until stiff. Fold into corn mixture. Drop by tablespoon into hot fat...1/2 to 1 inch deep.
