Title: Corn Rice Pilaf Categories: Vegetarian, Vegan, Main dish Yield: 4 Servings 3 tb Raisins 1/2 c ;water; boiling 1 c Celery; diced 1 Onion; chopped 4 tb Vegetable oil 1/2 ts Salt 1 c Canned corn; drained 4 c Rice; cooked Soak raisins in boiling wate to plump. In a deep skillet, saute the celery and onion in oil for 5 minutes. Add salt and drained raisins, and cook for 2 minutes. Add corn and cooked rice and heat through. Toss lightly with a fork.
