Cornbread Madeleines
Title: Cornbread Madeleines Categories: Breads Yield: 6 Servings 1 c Yellow cornmeal, browned in -oven 1/2 c Flour 1 ts Baking powder 1/2 ts Baking soda 3/4 ts Salt 4 tb Sugar 1 c Buttermilk 1 Egg, beaten 2 tb Melted butter or margarine 1 md Jalapeno pepper, seeded and -chopped fine In food processor, put 1/2 cup flour, baking powder, baking soda, salt, sugar and cooled cornmeal. Process until mixed, about 3-5 seconds. Add the buttermilk, egg and butter and process until smooth. Stir in the chopped pepper. Fill greased madeleine mould or tiny muffin tins 2/3 full of batter and bake for 15-20 minutes. Cool in pan, then remove. Origin: Appeal, Winter 1995.
