Title: Cottage Fried Potatoes

Yield: 6 Servings

4 Sweet potatoes
1 qt Vegetable oil; for frying
Salt

Cut the sweet potatoes into slices thin as potato chips. Soak them in ice
water until you are ready to serve them. At the last minute, heat the oil
in a fryer or electric frying pan to 400F. Blot the sweet potato slices dry
and fry them for 2 minutes, or until crisp and golden brown. Remove the
chips with a slotted spoon and drain on paper towels. Sprinkle with salt
and serve at once. Note: You could use the slicing blades of a food
processor to slice potatoes.
