Rodney- Don't know the Black Eyed Pea, but here is a delicious mustard
recipe I use for ham, but could be used for chicken or any other purpose
that you would use mustard sauce for. Hope it is what you are looking for.

Beat all ingredients together until thoroughly mixed. Cook over hot water
stirring constantly until thickened. Keeps in refrigerator indefinitely.
