Title: Cowboy Cookies Categories: None Yield: 72 Servings 2 c Brown sugar 2 c White sugar 2 Cubes margarine; softened 4 Eggs 1 ts Vanilla 4 c Flour 2 ts Baking powder 1 ts Baking soda 3 c Oatmeal 2 c Shredded coconut 1 pk (12 oz) chocolate chips 1 c Chopped nuts Refrigerate dough over night. In a large bowl cream the margarine and sugars. Add eggs and vanilla and mix well. Combine the flour with the baking soda and baking powder, then add to the creamed mixture and mix well. Stir in the oatmeal, coconut, chocolate chips and chopped nuts. Refrigerate dough for several hours or over night. Shape the dough in to balls and place them on a greased cookie sheet.
