Crab Stock
Title: Crab Stock Categories: None Yield: 1 Servings 2 lb Gumbo crabs; shelled, rinsed -and concasser (chopped) 1/2 lb Onions; rough chop 1/2 lb Leeks; rough chop 1/2 lb Celery; rough chop 4 Bay leaves 1 ts Whole dried thyme 1/2 tb White peppercorns; whole 1 Head garlic; cut in half 4 qt Very cold water 1. Place all ingredients in stock pot. 2. Bring to a boil, reduce heat and simmer for 45 minutes. 3. Skim carefully. 4. Remove from heat and strain.
