Crabmeat and Bell Peppers
Title: Crabmeat and Bell Peppers Categories: None Yield: 1 Servings 1 c Light cream 4 tb Butter 1/2 ts Ground nutmeg 2 tb Cornstarch 1 ts Lemon juice 1/4 c Dry white wine 1 ts Salt 1 c Cooked rice 2 c Crabmeat 6 md Bell peppers Paprika Cut off tops of bell peppers; remove seeds, wash and set aside. In a 4-up glass measure, place dream. Microwave on HIGH for 45 to 60 seconds or until hot. Mix in butter and nutmeg. In a small bowl, combine cornstarch, lemon juice, wine, and salt. Mix well. Add cream to mixture. Microwave on HIGH for 1 minute. Stir and microwave on HIGH for 1 to 2 minutes or until thickened. Combine with crabmeat and rice. Stuff bell peppers with crabmeat mixture. Sprinkle tops with paprika. Arrange stuffed bell peppers in a circle on a microwave safe serving platter. Cover with plastic wrap. Microwave on 80% power for 12 to 15 minutes or until crabmeat is done. Let stand 5 minutes before serving.
