Title: Cream of Broccoli Soup Categories: Soups, Appetizers Yield: 8 Servings 1/3 c Butter 1 c Wine 2 c Broccoli, chopped 2/3 c Celery, chopped 2/3 c Onion, chopped 1/3 c Flour 6 c Chicken Broth 1/2 ts Salt 1/2 ts Pepper, freshly ground 1/4 ts Thyme, crushed 2 c Light Cream Melt butter in 4 quart saucepan. Add wine, broccoli, onion and celery. Cook for 5 minutes over low heat. Blend in flour and chicken broth. Bring to a boil. Add salt, pepper and thyme.
